I have a proofer oven my mom always used years ago. It worked like a charm and she used it almost daily. I don't know how to use a proofer. It has a black dial with markings 60,90etc. There is an on/off switch. It has 4 metal racks inside as well as a reservoir with a lid on the bottom. I don't know the make, but would appreciate any general instructions you could give me. Thanks,Kathy
